3/4 cup butter or margarine
1 1/2 cups packed brown sugar
3/4 Cup of Water
2 1/4 cups semisweet chocolate chips
2 eggs
2 1/2 cups pastry flour
1 1/4 teaspoons baking soda
1/2 teaspoon salt
36 chocolate mint wafer candies
Directions

Preheat Oven to 350 F
In a large pan over low heat, cook butter, sugar and water until butter is melted. Add chocolate chips and stir until partially melted. Remove from heat and continue to stir until chocolate is completely melted. Pour into a large bowl and let stand 10 minutes to cool off slightly.
At high speed, beat in eggs, one at a time into chocolate mixture. Reduce speed to low and add dry ingredients, beating until blended. Chill dough about 1 hour.
Roll dough into balls and place on ungreased cookie sheet about 2 inches apart. Bake 8-10 minutes.
While cookies are baking set aside and prepare for use. When cookies are brought out of the oven, put one mint on top of each cookie.
Let the mint sit for up to 5 minutes until melted, then spread the mint on top of the cookie

1 cup margarine or butter
1 1/8 cup creamy peanut butter
1 cup white sugar
1 1/8 cup packed brown sugar
1/2 cup buttermilk
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 1/2 teaspoons baking soda
1/3 teaspoon salt
Directions

Preheat oven to 375 degrees F, Lightly grease cookie sheets.
Mix the shortening, peanut butter, white sugar, brown sugar and buttermilk until smooth and fully combined.
Add the flour, baking powder, baking soda and salt to the peanut butter mixture and mix until well blended.
Drop cookies 2 inches apart on lightly greased cookie sheet. Flatten with a fork that has been dipped in flour. Bake at 375 degrees F for 10 to 12 minutes

2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup shortening
2 eggs
1 1/2 cups white sugar
1/4 cup lemon juice
2 teaspoons lemon extract
1 cup rolled oats
1 1/4 cups raisins

Directions
1. Preheat oven to 350 degrees F (175 degrees C).
2. Lightly grease 2 cookie sheets.
3. In large bowl, cream shortening, sugar, eggs, lemon juice and lemon extract.
4. Mix until well blended.
5. Blend in the flour, baking soda and salt.
6. Stir in the oats and raisins. Drop dough by spoonfuls 2 inches apart on to cookie sheets.
7. Bake for 12 to 15 minutes and transfer to racks to cool.

Preparation

1.Preheat the oven to 350 degrees F (175 degrees C). Sift together flour, baking powder, baking soda, and salt; set aside.
2.In a medium bowl, cream butter, margarine, brown sugar, and white sugar until smooth. Beat in eggs one at atime.
3. Gradually stir in the sifted ingredients (add Chipotle pepper if desired) until well blended. Mix in oats and butterscotch chips. Drop from a teaspoon onto ungreased cookie sheets.
4. Bake for 10 to 12 minutes in preheated oven, or until edges are golden. Let set up on the cookie sheets for a few minutes before transferring to wire racks to cool completely.
